Recipe: Honey balsamic green beans

Vegetables, nuts and a dash of honey transform this healthy dish into something to savor. And one of the best parts? It's quick to whip up when you're pinched for time:

Honey balsamic green beans

  • 4 cups trimmed and sliced green beans
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 cup pomegranate seeds
  • 1/4 cup pistachios, chopped and roasted

  1. Trim beans. Sauté on medium heat with olive oil, salt and pepper for 3-5 minutes, or until all the beans are bright green
  2. Add balsamic vinegar and honey to the pan and toss until the beans are glazed (1 minute).
  3. Transfer to a platter and sprinkle with pomegranate seeds, pistachios and a bit of sea salt.
  4. Serves 4
  • If you have a nut allergy, sunflower seeds are a good substitute for pistachios.

Why green beans?

All vegetables have their super powers, and green beans are no different. A good source of protein, potassium and fiber, helping lower cholesterol and regulating blood pressure, green beans also help fight inflammation.

A couple of notes: Buy fresh when you can. And cook instead instead of boil — boiling removes nutrients and taste.
